Southwest Flavor
I love, no I adore Mexican food. I make the best tacos, if I do say so myself. They are one of my favorites. I love to get a piece of beef and cook it all morning until it shreds. I cut up onion, garlic, tomato, fresh jalapeño,lettuce and cheese. Be sure to shred the lettuce fine and grate the cheese on the small grate rather than the large. It adds so much more flavor like this. When the meat is ready I fry corn tortillas is a small amount of oil. I make sure the tortillas are fried in an open position so that they don’t tear when stuffed. I double fry the bottom to make it stronger.
The secret is to put the onion, garlic, and cayenne pepper on top of the hot meat inside of the tortilla shell. Then add the lettuce, next the cheese and top with lots of tomatoes and jalapeño. If I feel in a “hot” mood I add a little more cayenne pepper on top of it all. So delicious and surely the foods of the gods.
