Pizza Potato Skins

  • Tater Skins4 Potatoes (scrubbed)
  • 1 small can of tomato sauce
  • 1 cup grated mozzarella cheese
  • 1/4 cup fresh chopped basil
  • 1/4 cup fresh chopped oregano
  • 1/4 chopped red onion
  • 3 cloves garlic chopped fine

Bake the potatoes or cook in microwave until you can stick a fork in it easily. Cut the potatoes in half lengthwise. Scoop out the centers being sure to leave some of the potato on the skins. They should look like little bowls. Reserve the potato for another recipe such as mashed potatoes. Put the skins on a cookie sheet and make them into little pizzas. Add the tomato sauce for the first layer and then sprinkle the spices on next. Next add the garlic and onion. Top with the cheese and return to the oven (moderate) and let the cheese melt. Optional: You may also use other pizza toppings such as olives, bell peppers, pepperoni or sausage. Enjoy!!
