Potato Skins

Potato SkinsWe made the Pizza Potato Skins tonight. They are delicious. We added pepperoni and olives(see yesterdays post) The reason I am into potatoes right now: The store right across the street had two 10lb bags of potatoes for 99cents!! So here is another recipe for those potato skins.

You will need:

  • Potatoes
  • Cheddar Cheese
  • Onion
  • Bacon
  • Garlic
  • Sour Cream
  • Chives

Clean and bake your potatoes (about an hour in a moderate oven). Cut them in half lengthwise and scoop out the potato. Reserve the potato for another recipe such as mashed potatoes. Your potato halves should look like little bowls. Place them on a cookie sheet and sprinkle grated cheese into them. Top with a small amount of finely chopped garlic and onion. Toast the potatoes under the broiler until the cheese is melted. Crumble bacon bits ontop and add a dollop of sour cream and chives and serve immediately. So good!!
