Christmas Wild Rice

Wild RiceMy mom brought this dish to a family Christmas dinner once and I have used it ever since for my Christmas dinners. She used the herb and butter rice mixes, but I like to get wild rice, and if I am in the mood, a brown rice as well. I never cook my wild rice as long as the package tells you to. I just don’t like it mushy. I let mine get to a nice tender chewy texture, which usually takes half the time. You must cook the brown rice separately, I usually boil all my rice, whatever the type may be, like I do my pasta. I always retain the rice water to make a beverage for the kids.

  • 1 cup cooked wild rice
  • 1 cup cooked brown rice
  • 1 package white mushrooms chopped fine
  • 1 can chopped black olives
  • 2 tbs. extra virgin olive oil
  • 1 tsp. garlic powder
  • 1 tbs. parsley flakes
  • salt and pepper to taste

Add any other of your favorite spices if you like. This is served along with the cooked ham, fresh green beans or asparagus, biscuits and cream gravy, and the Christmas fruit salad. We usually end up putting the gravy over the rice as well as the ham and biscuits.
