October Popcorn Balls

My mom used to make the traditonal hard ball stage corn syrup popcorn balls, but I devised a different and simpler recipe throughout the years. You may use an air popper to pop your corn, but the popcorn has a much better flavor if cooked in a large pot on top of the stove.

Add butter and salt to cover bottom and then add a few handfuls of popcorn.Turn the heat on high. Until you know how much popcorn your pot can hold, start small. Popping corn can injure you. Be sure to wear oven mitts and also have pot holders. Hold the lid securely and shake back and forth. Once the popcorn starts popping move the pot back and forth quickly to avoid burning. You may need to lift it slighly above the flame as well. Listen carefully. When the popping slows down remove it from the heat and wait a couple minutes before removing the lid. Have a large paper bag ready to pour the popcorn in. Repeat the process until you have enough popcorn. I would use one bag of marshmallows for each 3/4 full large shopping bag of popcorn. Be sure to lay out some wax paper to place your popcorn balls on to cool.

Next I put a large pot on very low and add lots of butter (a whole stick) , then a bag of marshmallows. Do not leave…stir constantly until you have a pot of melted marshmallows. You can do this alone, but it is better to have someone hold the bag and shake it vigorously whie slowly pouring the marshmallow mixture over it. The marshmallow will burn your skin, so do not let it get on your hands. Be sure the adult shaking the bag has oven mitts on.

As soon as the mix is in the popcorn. Butter your hands well, and have extra butter there so that you are able to form the balls without the gooey marshmallow sticking to you. You will have to move quickly grab small portions of the mixture from the bag and form it into balls. This is where some extra hands may come in handy. If you have children helping you be sure it is cool enough before you give them their popcorn mixture. You need to let it cool slightly, but in order to form the popcorn balls, it will need to be warm. Form the popcorn balls and once they are cool, you may wrap them in baggies with ribbons or in wax paper. These go so fast, you will want to make two or three batches!
