Sister’s House
We went to my sister’s house again and we had such a wonderful time eating and hiking and then eating again. When we first arrived she used her infrared cooker to cook these vegetable tempura with special dipping sauces. They were so delicious.
Then we went for a hike and when we got back, my sister, our daughters and I went into the kitchen and we all started cooking!! My sister starting frying up Angus burgers and toasting the buns. Our daughters made this awesome pumpkin cobbler. It was spicy and delicious and had two whole cans of 100% pumpkin! I made the guacamole! Ta daaaa! She didn’t have garlic so I used what she had to try to spice it up. First I added about 1/2 cup salsa, 1 tbs. dried minced onion, 3 tbs. lime juice, 1/8 tsp. cayenne pepper, 1/4 cup freshly chopped green onion and then 5 “just right” avocados. I mixed it all well and it disappeared right before our eyes. Some people put it on their hamburgers. Others (like me) savored it with a few corn tortilla chips. Avocado is like chocolate to me. We have a relationship, and I just love it! I can’t help myself, I always say “Yummm, mmm, so good.” ha ha ha…my family thinks I am weird, but I know avocado is good for you, so it’s okay!!
Oh, before I forget…”just right avocados” are not mushy at all. They are soft, but not mushy. When you eat an avocado that is just right, the color and flavor are perfection!!
