Potstickers

We bought some potstickers at the Asian market near our home. We weren’t sure how to cook them, so we tried this and they were wonderful!!I had an infusion of oil in an old wine bottle. I made it a few months ago with the left over red peppers you get with delivery pizza. My husband brought home about 30 packets from his work. I guess they order lots of pizza over there. Anyway, I poured all the red pepper into my wine bottle and then poured in some canola oil, till it reached the bend int he bottle. I put the cork back into the bottle and shook it. I stuck it in the fridge on the door and every couple weeks or so I would shake it again. The peppers settled at the bottom, but the oil is a beautiful red color.

Well, we used this oil to cook our potstickers. We put a small amount to cover the bottom in a non-stick pan and kept the potstickers moving on medium heat, so they wouldn’t stick. After they brown on one side you use tongs to turn them on all the various “sides” to brown them nicely. Be sure to cook them on low, or you will have brown on the outside and frozen in the middle. This oil was mouth-watering-ly-delicous!!! It isn’t hot, it is so flavorful and made the potstickers one of the best foods I have eaten in a long time! After the potstickers were browned nicely, we sprinkled garlic powder and dried parsley on them and served it with soy sauce.
