Making Family Tacos

We had so much fun this evening. The family came over and we all chipped in to help make tacos, fresh salsa, guacamole and tortilla chips. Afterwards we made popcorn balls and caramel apples. This was after a whole day of shopping, and we shopped until we almost dropped. It was nice having help in the kitchen. My husband peeled and chopped up the garlic, and shredded the lettuce. My daughter grated the cheese real fine and fried the tortilla chips and taco shells. She fries the taco shells the way I taught her in a small amount of very hot oil. You put the corn tortilla in, then quickly turn it over and fold it in half, but leave it open slightly. Then turn it to the other side and remove from heat and place on a paper towel. We always fry the tortillas right when we are going to eat. They are soft and crispy at the same time, if fried just right.My niece chopped the tomatoes, cut and squeezed the lime into the salsa, and stirred the chopped garlic into the guacamole and salsa dishes. She also helped my sister with the cilantro and she broke open the ice trays into a bowl so we all had easy access to the ice. My sister also chopped the red onion very nicely, helped finish up the tomatoes and cleaned off the table. I cut up the avocados, added the juice of one lime, then I cut up the jalapeƱo for the salsa. I added a small amount of cayenne pepper to the guacamole and a little black pepper too. I started the meat cooking, and had the oil ready on low heat, so that we could start frying when it was time to cook the tortillas.
We placed all the dishes on the table, buffet style and as the tortillas were done, each person would make their taco in whatever way they liked and then proceeded to eat!! Delicious!! My preferred way to make a taco is as follows: Into a freshly cooked tortilla, add hamburger. Top it with finely chopped fresh garlic and cayenne pepper. Then add lots of lettuce, a smaller amount of cheese and tons of tomatoes. I then sprinkle a little more cayenne pepper to the top, and that is the perfect taco, for me at least! My kids like to add the cheese after the meat, so that the cheese melts. I love making all the fixings and letting everyone make their taco the way they like it. All in all it was a great evening with some great cooking!
