  • Pizza Bagels

    1 package of Bagels

  • 1 can spaghetti sauce
  • 16 oz. fresh grated mozzarella cheese
  • 1 can sliced olives
  • 1 package pepperoni slices
  • 1 chopped bell pepper
  • 1 chopped red onion
  • 1 package sliced mushrooms
  • 1/4 Cup extra virgin olive oil

Split the bagels and put them on a cookie sheet. Preheat your broiler on HOT (about 400 degrees). Use a spoon to spread olive oil on each bagel, next add the spaghetti sauce and a sprinkle of cheese. Add various toppings with the remaining ingredients, taking into account that some people will like extra cheese only, or pepperoni and olives, etc. Other toppings you may like to have on hand are jalapeños, ham, Canadian bacon and pineapple. After you load them up with your favorite toppings, sprinkle a little bit more cheese on top. Pop them into the oven and remove them when the cheese melts. You may leave them in a little longer if you like it toasted. Tip: Don’t leave the room, they may cook quickly depending on your stove.

Eggplant

Eggplant

We love eggplant. Our favorite eggplant recipe is a half cooked, half raw ingredients that you eat with crackers. It is so filling, and fulfilling at the same time.

  • Eggplant (any type chopped into quarter inch squares -about 2 cups)
  • 2 Tbs. extra virgin olive oil
  • 4 cloves finely chopped garlic
  • 1/2 cup chopped onion
  • 4 tbs. chopped fresh basil
  • 3/4 cup chopped roma tomatoes
  • Box of your favorite crackers

Add the oil to a pan and get it hot. Cook the eggplant until tender and some parts may be browned, if you like. When the eggplant is tender add half of the garlic, onion and tomatoes. Let it cook for 5 minutes, then add the rest of the ingredients except for the crackers. Turn the heat off, and stir well. Serve immediately, topping the crackers and eating while still warm. This is so good, and it is healthy for you too! Delicious!

Banana Cream Pie (Low Sugar)

  • Banana Slices

    1 package frozen pie crusts (contains 2)

  • 6 yellow bananas
  • 1 large package sugar free vanilla or banana pudding mix - instant
  • whole milk (see pudding directions)
  • 1 pint whipping cream

Cook the crusts according to package directions. Make the pudding. When crusts are done, alternate layers of banana slices and pudding into the crust until you reach to top of the pie crust. (Be sure to cut the bananas fresh when you do this to avoid slimy bananas.) The last layer should be a nice smooth layer of pudding. Put the whipping cream into a glass bowl and whip on high until it peaks. Top the pie with whipping cream. Put in the freezer to chill for 1-2 hours, then slice and serve immediately.

Pasta Salad

  • Pasta Salad

    1 package rainbow twirls (boiled)

  • 1 chopped brown onion
  • 1 bottle ranch dressing
  • 3/4 cup sweet relish
  • 1 cup chopped cooked ham pieces (cut bite size)
  • 1 cup grated mozzarella cheese

Mix all ingredients gently. Chill for 2-3 hours before serving. Serve with sandwiches or BBQ foods. This is a unique pasta salad that could top a tossed green salad to make a complete lunch or dinner.

Baked Rigatoni

The secret to Excellent pasta is this: Do not overcook it, be sure it is still firm. Before adding sauce or anything to the pasta, toss it with olive oil or butter and garlic powder. If you are baking the pasta into a cheesy dish also toss with parmesan cheese and a few sprinkles of cayenne pepper. Doing this flavors the pasta nicely and adds a new dimension to your baked pasta dishes such as Lasagna or baked rigatoni.You will need:

  • 1 Package Rigatoni cooked with salt (do not overcook)
  • 1 Can of Spaghetti Sauce
  • 16 oz. mozzarella cheese grated
  • 1 quarter butter
  • 1/4 cup Parmesan cheese
  • 1 tbs garlic powder
  • 1/4 tsp black pepper
  • 1/8 - 1/2 tsp. cayenne pepper (depending on your taste)

To a large baking pan or casserole dish add your butter( cut into small pieces). Drain the rigatoni and pour it into the baking dish on top of the butter, add your spices and Parmesan cheese and toss until coated well. Pour the spaghetti sauce over the pasta. You may add no more than 1/4 cup water to the sauce can to get the rest of the sauce out of the can, but pour that along the edges, not in the center. Add the grated mozzarella cheese to the top. Bake in a moderate oven until the cheese is melted and bubbly. Some people like the cheese almost toasty, if so leave it in a little longer. It depends what kind of mood I am in, sometimes I just let the cheese melt, other times I let it get a little toasted. Also, if I feel real saucy, then I add two cans of sauce!

Chili Mac

Macaroni And Cheese

I had made Chili before, and of course I had made macaroni and cheese (who hasn’t?) BUT, I have never made Chili Mac, until my Dad showed me. I just recently met my biological father, and come to find out, he is a great cook! He loves spicy foods. He introduced us to Chili Mac.He makes boxed mac-n-cheese then adds cans of HOT chili to it and warms it up, nice and hot and serves it! Even my youngest son loves it!

Well, I made a version of it today that I will share with you. My sister had given me a huge jar of fresh salsa. So I added that to some browned ground beef, plus some southwestern seasoning I had sitting in the cupboard. Then I added that to the boxed mac-n’cheese (made with milk and butter). I also had made pot of small red beans yesterday, so I added a couple scoops of those, as well. It turned out very tasty. Be sure to let the salsa and hamburger simmer awhile before adding it to the dish!

Orange Chicken

  • Orange Chicken

  • Chicken Legs (family pack) You may use any cut you prefer.
  • 4 oranges - sliced
  • 3 apples- sliced
  • 1 cup chopped fresh ginger root
  • 3 tbs. sesame oil
  • salt and pepper to taste
  • 2 tsp. garlic powder
  • 3 tbs. honey

Use half of the oil to grease a baking pan. Layer half of the oranges in the bottom of the pan. Then layer the apples next. Sprinkle salt, pepper and half of the garlic powder. Add the chicken next. Sprinkle salt, pepper, and the rest of the garlic powder on top of the chicken. Drizzle honey over the chicken, sprinkle the ginger over the chicken, then place the orange slices on the main meaty part of each chicken leg. Add the rest of the apples and drizzle the rest of the sesame oil over it all.

Bake at 350 degrees for  1-2 hours depending on the cut.  Thicker pieces will take longer to cook. Enjoy!
