We had so much fun this evening. The family came over and we all chipped in to help make tacos, fresh salsa, guacamole and tortilla chips. Afterwards we made popcorn balls and caramel apples. This was after a whole day of shopping, and we shopped until we almost dropped. It was nice having help in the kitchen. My husband peeled and chopped up the garlic, and shredded the lettuce. My daughter grated the cheese real fine and fried the tortilla chips and taco shells. She fries the taco shells the way I taught her in a small amount of very hot oil. You put the corn tortilla in, then quickly turn it over and fold it in half, but leave it open slightly. Then turn it to the other side and remove from heat and place on a paper towel. We always fry the tortillas right when we are going to eat. They are soft and crispy at the same time, if fried just right.My niece chopped the tomatoes, cut and squeezed the lime into the salsa, and stirred the chopped garlic into the guacamole and salsa dishes. She also helped my sister with the cilantro and she broke open the ice trays into a bowl so we all had easy access to the ice. My sister also chopped the red onion very nicely, helped finish up the tomatoes and cleaned off the table. I cut up the avocados, added the juice of one lime, then I cut up the jalapeño for the salsa. I added a small amount of cayenne pepper to the guacamole and a little black pepper too. I started the meat cooking, and had the oil ready on low heat, so that we could start frying when it was time to cook the tortillas.
We placed all the dishes on the table, buffet style and as the tortillas were done, each person would make their taco in whatever way they liked and then proceeded to eat!! Delicious!! My preferred way to make a taco is as follows: Into a freshly cooked tortilla, add hamburger. Top it with finely chopped fresh garlic and cayenne pepper. Then add lots of lettuce, a smaller amount of cheese and tons of tomatoes. I then sprinkle a little more cayenne pepper to the top, and that is the perfect taco, for me at least! My kids like to add the cheese after the meat, so that the cheese melts. I love making all the fixings and letting everyone make their taco the way they like it. All in all it was a great evening with some great cooking!

We didn’t cook again today. We woke up early and headed off to Denny’s for the biggest breakfast possible. We had a big day ahead of us and didn’t want to have to stop in the middle to eat. I was very surprised at how good the food was, this time. The sausage actually tasted like pork, and was not overly greasy. Everything was delicious and I may go back there again.The reason we had to fill up, was because we were planning on putting in a whole day of yard work. We tend to work until we are done, taking a couple water breaks, but we prefer to just keep going until we are finished, which we did. My big breakfast held me over until we completed the task at hand.
So, if you plan on getting in a full day’s work, plan on setting aside some time to have some orange juice, maybe a cup of coffee, some meat ( sausage, bacon, ham), hash browns, eggs and pancakes! If you don’t want to go out to eat them, then make them at home.Your body will thank you for fueling it up and you will be surprised at how well, and how long you can work with all that extra energy!

We didn’t do much cooking today. We went to Universal Studios Hollywood and ate Pizza for lunch. I was a little disappointed in the food AT USH. Since it is in Hollywood, I guess I was expecting fantastic!
One thing that is fantastic about about USH is the long shop-filled and restaurant-filled entrance called City Walk. I haven’t had a chance to try out any of the restaurants, but they all look so inviting, and gorgeous!

We bought some potstickers at the Asian market near our home. We weren’t sure how to cook them, so we tried this and they were wonderful!!I had an infusion of oil in an old wine bottle. I made it a few months ago with the left over red peppers you get with delivery pizza. My husband brought home about 30 packets from his work. I guess they order lots of pizza over there. Anyway, I poured all the red pepper into my wine bottle and then poured in some canola oil, till it reached the bend int he bottle. I put the cork back into the bottle and shook it. I stuck it in the fridge on the door and every couple weeks or so I would shake it again. The peppers settled at the bottom, but the oil is a beautiful red color.
Well, we used this oil to cook our potstickers. We put a small amount to cover the bottom in a non-stick pan and kept the potstickers moving on medium heat, so they wouldn’t stick. After they brown on one side you use tongs to turn them on all the various “sides” to brown them nicely. Be sure to cook them on low, or you will have brown on the outside and frozen in the middle. This oil was mouth-watering-ly-delicous!!! It isn’t hot, it is so flavorful and made the potstickers one of the best foods I have eaten in a long time! After the potstickers were browned nicely, we sprinkled garlic powder and dried parsley on them and served it with soy sauce.

I consider myself a connoisseur of brownies. I have loved brownies since as far back as I can remember, and when given the choice between a cookie and a brownie, I would always choose the brownie. I have to admit, I have been so sadly disappointed in my life, when it comes to brownies. The perfect brownie is chewy, chocolatey, rich and the top of the brownie had it’s own story to tell. The top looks like a dry desert with lines and ridges, but that is where that description
ends. As you bite into the brownie, the top can be described as crunchy or crusty. As your teeth go further into the brownie the richness comes full flavor into your mouth and the chocolate makes your mouth water. That is how you can tell a good brownie from a not so good brownie.
As a brownie connoisseur I can assure you that perfect brownies are few and far between. Once you have tasted a perfect brownie, you will almost want to spit all others out of your mouth. It can almost make you cry. Such a waste of perfectly good chocolate. I have found out over the years, that you only need one egg for a batch of brownies. Adding more egg turns the brownie mixture into a cake!
So all brownie lovers unite and let’s start showing the world what a real brownie is! No more fake brownie bites, or cake-like so called brownies should be labeled as “Brownies”. There should be a precise definition of “brownie” in the dictionary so that the non-aficionado does not get them confused with cake and cookies and other such desserts.

My daughter and I made a wonderful Chinese Feast today. One of the dishes we made was so delicious I just had to tell you how we made it.
- 1 Can Apricots
- 1 Can Pineapple Chunks
- 2 tbs. chopped fresh ginger
- 2 cloves finely chopped garlic
- 1/2 Cup Chopped onion
- 1 chopped bell pepper
- 1/4 cup thinly sliced carrot slivers
- 1/4 cup vinegar
- 1 tbs soy sauce
- 1 tsp garlic powder
- 1 tbs sesame oil
- 2 tbs tapioca starch stirred into 1 cup cold water
Add everything (except the bell pepper and the tapioca starch with water) to a sauce pan and cook until boiling and then lower heat to simmer. Throw in the bell pepper and let it cook for 5 minutes, then add the tapioca water. Serve over any type of pork you desire If you have to have the traditional pink color, you may add some maraschino cherry juice and even some of the cherries.

We went to my sister’s house again and we had such a wonderful time eating and hiking and then eating again. When we first arrived she used her infrared cooker to cook these vegetable tempura with special dipping sauces. They were so delicious.
Then we went for a hike and when we got back, my sister, our daughters and I went into the kitchen and we all started cooking!! My sister starting frying up Angus burgers and toasting the buns. Our daughters made this awesome pumpkin cobbler. It was spicy and delicious and had two whole cans of 100% pumpkin! I made the guacamole! Ta daaaa! She didn’t have garlic so I used what she had to try to spice it up. First I added about 1/2 cup salsa, 1 tbs. dried minced onion, 3 tbs. lime juice, 1/8 tsp. cayenne pepper, 1/4 cup freshly chopped green onion and then 5 “just right” avocados. I mixed it all well and it disappeared right before our eyes. Some people put it on their hamburgers. Others (like me) savored it with a few corn tortilla chips. Avocado is like chocolate to me. We have a relationship, and I just love it! I can’t help myself, I always say “Yummm, mmm, so good.” ha ha ha…my family thinks I am weird, but I know avocado is good for you, so it’s okay!!
Oh, before I forget…”just right avocados” are not mushy at all. They are soft, but not mushy. When you eat an avocado that is just right, the color and flavor are perfection!!

There’s nothing like a good tuna sandwich. I feel that for any sandwich the bread is the most important aspect. I love crusty chewy bread, either French, Italian, or sourdough.
- 1 small can tuna ( chilled & drained )
- 1 tbs. mayonnaise
- lots of pepper
- 1 tbs. sweet relish
- 2 tbs. finely chopped onion
- 2 tbs. finely chopped celery
- 1 finely chopped clove garlic
Mix all ingredients well and scoop onto your favorite bread. My husband likes salt and more mayonnaise, so I spread extra on his bread and sprinkle a little salt. You may add more mayo directly into the mix instead, if you like.
